100% Monastrell from our 10 year old goblet-trained vineyards located in the Caravaca de la Cruz area at an altitude of 850 meters aboce sea level. Soil structure clay-loam and limestone composition. Vineyards without irrigation so the roots reach the maximum depth in search of moisture.
The winemaking process is very traditional, blending destemmed grapes with 50% whole bunches.
Fermentation in limestone tanks from a quarry clase to the winery. Short maceration of 6 days.
After pressing, the wine is transferred to French oak vats where it completes alcoholic fermentation and undergoes malolactic fermentation. Aged in French oak barrels for 4 months and 2 months in cement tanks.
