METHOD

TRADITIONAL CULTIVATION OF HEAD-TRAINED BUSH VINES, ABOVE ALL RAIN-FED, FACILITATES ONE OF OUR MAIN OBJECTIVES, TO OBTAIN NATURAL, ORGANIC FRUIT WHICH PRODUCES FRESH GRAPES, SMALL BUNCHES, OPTIMUM ACIDITY, MODERATE ALCOHOL CONTENT AND FLAVOURS REMINISCENT OF THE LAND AND LANDSCAPE OF CARAVACA DE LA CRUZ.

GRAPES ARE PICKED BY HAND AND PLACED IN 10-KILO BOXES, THEN CARRIED FROM THE FIELD TO THE WINERY IN THE SHORTEST POSSIBLE TIME, SINCE ALL THE VINEYARDS ARE ON ON THE SAME ESTATE.

WINE IS MADE TRADITIONALLY, MIXING 50% DE-STEMMED GRAPES WITH WHOLE BUNCHES. FERMENTATION AT 23-26° IN 1000 KG LIMESTONE TANKS WITH TWO PUMP-OVERS.

SHORT MACERATION OF 8 DAYS. AFTER PRESSING, THE WINE IS TRANSFERRED TO FRENCH OAK VATS, WHERE THE ALCOHOLIC FERMENTATION IS COMPLETED, AND MALOLACTIC FERMENTATION TAKES PLACE.

AFTER A LIGHT CLARIFICATION, THE WINE IS BOTTLED UNFILTERED FOR FINAL AGEING.

THESE ARE WINES OF INTENSE COLOUR, FINE AND ELEGANT AROMAS, FRUITY, TASTY AND FLESHY ON THE PALATE.
