Mediterranean climate but instead of warm in Caravaca de la Cruz thanks to its altitude over 800 meters, lower temperatures and rainfall > 400 mm make the climate is temperate and the average annual temperatures are< to 18.5 ° C.
100% Monastrell from our goblet-trained vineyards of more than 40 years old located in Caravaca de la Cruz, at an altitude of 850 meters above sea level. Soil structure clay-loam and limestone composition majority. Vineyards without irrigation so the roots reach the maximum depth in search of moisture.
The winemaking process is very traditional and blends destemmed grapes with whole bunches at 70/30%. The destemmed grapes belong to the southwest a rea of Caravaca where we achieve the power of our Monastrell and 30% corresponds to the northwest a rea where we obtain the fruit and elegance.
Fermentation in limestone tanks from a quarry near the winery.
Short maceration of 6 days.
After pressing, the wine is transferred to French oak vats where the alcoholic fermentation is completed and malolactic fermentation takes place. Aged in French oak barreis for 8 months.
After a light fining, it is bottled unfiltered.
